Blanc de Blancs comes from Languedoc–Roussillon, a region marked by geological variety and one of the longest winemaking histories in France. Vineyards here sit on alternating layers of limestone, schist, and clay, each influencing how the grapes retain acidity, develop aroma, and express minerality. The southern climate brings long periods of sun, while the Tramontane wind, a defining feature of the region, cools the valleys and helps preserve freshness in the fruit. Wild garrigue plants such as thyme, rosemary, and lavender grow around the vineyards and subtly shape the aromatic profile of the grapes. Roman roads, monastic vineyards, and centuries of agricultural practice have left a visible imprint on the landscape. After years focused on quantity, the region is now driven by producers who prioritize precision and regional identity.

WINEMAKING

The Making of Blanc de Blancs

Blanc de Blancs is made by using methods that prioritise acidity, texture, and aromatic definition. The grapes are harvested early in the season to retain natural brightness. After fermentation, the base wine matures on fine lees for a full year, a process that slows oxidation and gradually develops the soft, creamy texture and subtle brioche notes associated with the style. Once it has reached its intended profile, the alcohol is removed through a low-temperature, aroma-preserving method designed to protect delicate aromatic compounds and structural elements. This allows the wine’s original balance, minerality, and fine mousse to remain largely unchanged. The result is a wine shaped by standard sparkling-wine practices, adapted to maintain integrity after dealcoholization.
