Steps in Our Winemaking Process
Grape Varieties
Grapes define a wine long before it reaches the cellar. Their aromas, flavors, acidity, and tannins shape the wine’s entire personality. We work with a wide range of varieties chosen not only for character, but for their ability to hold structure and depth after alcohol is removed. Each grape is selected for how it behaves through fermentation, aging, and ultimately, dealcoholization, so the final wine carries its full expression.
Terroir
Terroir determines a wine’s identity: the soil, the climate, the altitude, the way vines grow and struggle. Our wines are made in distinct regions across Europe, from the limestone slopes of Saint-Chinian and the cool valleys of Alsace, to the high plains of Ribera del Duero and the hills of Treviso. Each place brings its own tension, minerality, and balance, foundations that remain even after the wine is liberated from alcohol.
Harvesting
Timing the harvest is one of the most decisive moments in winemaking. Grapes must be picked at the exact point where acidity, sugar, and phenolic ripeness meet. Too early or too late, and the balance is lost. Harvesting is where intention becomes tangible, a commitment to precision before any cellar work begins.
Crushing & Pressing
Once harvested, grapes are crushed or pressed to release their juice. Whites and rosés are pressed gently to preserve freshness; reds may undergo maceration to extract color and tannin. This step determines texture and sets the structural baseline for the wine, long before fermentation begins.
Blending
Blending is where intuition and technical understanding meet. We bring together different grape varieties, terroirs, and winemaking styles to create layers of acidity, fruit, structure, and minerality. The goal is balance, a wine that feels complete, composed, and expressive even after dealcoholization. Each blend is built to withstand transformation without losing identity.
Fermentation & Aging
We rely on traditional European methods that build real depth: cold maceration to preserve freshness, natural fermentation to develop complexity, and aging in steel, concrete, or barrel to shape texture and structure. These steps matter because they form the backbone of the wine, the backbone that must stay intact when alcohol is removed. Crafting a liberated wine begins long before the dealcoholization stage.
Dealcoholization
Our wines are liberated through a patented vacuum-distillation process carried out at low temperatures. This allows us to remove alcohol gently while protecting volatile aromas and delicate flavor compounds. After distillation, we recover the original aromas and reintegrate them into the liberated wine, ensuring it reflects the character of the initial cuvée with precision and integrity.
