Low Intervention Organic White Nº2 comes from Alsace, a region shaped by the Vosges mountains, the Rhine, and a wide range of soils including granite, limestone, clay, and sand. Long, dry summers and cool nights allow grapes to ripen slowly, developing intensity while preserving acidity and aromatic precision. Alsace’s identity reflects both French and German influences, visible in its architecture, food traditions, and winemaking. Timbered houses, medieval villages, and historic cellars speak to a long viticultural history. This mix of climate, geology, and cultural depth contributes to the clarity and structure that define this wine.
The Making of Low Intervention Organic White Nº 2
Low Intervention Organic White Nº2 is made by working with six Alsatian varieties grown on mineral-rich clay, limestone, and granite soils. The cool northern climate and long ripening period support brightness, depth, and aromatic detail. Grapes are hand-harvested, gently pressed, and naturally fermented in stainless steel without added yeasts or additives. The wine then matures for twelve months to build texture and composure. Once it has reached its intended expression, a low-temperature, aroma-preserving method removes the alcohol, maintaining balance, precision, and mineral definition. The method follows low-intervention principles, adapted carefully for dealcoholization.

Low Intervention Organic White Nº2 is crafted from Riesling, Gewürztraminer, Auxerrois, Pinot Blanc, Pinot Gris, and Sylvaner. These varieties provide aromatics, acidity, and phenolic detail, qualities that help the wine remain structured and expressive even after dealcoholization.

- Gewürztraminer – Signature floral and spice intensity; gives expressive aroma and richness.
